Microbiological Assessment of Groundnut Paste Sold in Jimeta Markets, Yola, Adamawa State Nigeria

Groundnut paste is frequently associated with food-borne illness due to contamination traceable food handlers, processing materials as well environmental conditions and this therefore necessitated the microbiological quality examination of groundnut paste. The percentage occurrence bacteria isolates moisture content were determined using standard laboratory techniques. pastes was between range 0.8% 4.8%. Total count fell 1.8 ×1014 12.4 × 1014CFU/mL organisms such Proteus species (spp.), Pseudomonas spp., Bacillus Salmonella Klebsiella Stapylococcus aureus, Escherichia coli, Shigella Alcaligenes faecalis Enterobacter spp. isolated. fungal 2×107 4×107CFU/mL identified Aspergillus niger, flavus, Rhizopus Penicillium most prevalent a 19.23 % while showed least prevalence 3.85%. results also show that fungi spreads across all samples niger flavus obtained in two samples, three other Penicillum four samples. It apparent from result study examined highly contaminated microbial sufficient enough be public health hazard Jimeta markets Adamawa State at large, caution must applied its uses consumption.
